Today’s recipe is another of my Mom’s traditional Lent season recipes, it’s a delicious Shrimp Soup, it’s so easy to make and amazingly rich and flavorful that you will want to make it all year around! I hope you give it a try soon!

Ingredientes:
450 G Dried Shrimp
450 G Fresh Shrimp, Peeled and deveined
450 G Fish cut in small chunks (cod, haddock, tilapia, etc)
2 C Chopped Carrots
1 ½ C Chopped Celery
1 chopped Onion
½ C chopped Cilantro
2 Minced Garlic Cloves
4-5 small, diced potatoes
6-7 Mirasol Chillies (or Guajillo)
1 Bay Leave
Sal
Pepper to taste
1-2 Cubes of Shrimp bouillon Seasoning
10 C water or vegetable broth (more if necessary)

CHOCOLATE PB OATS
3/4 C rolled oats
1.5 C water
1 Tbsp cocoa powder
1 banana chopped (fresh or frozen)
1 cup strawberries
1 tbsp peanut butter

In a saucepan, combine water, oats, banana and cocoa powder. Cook over medium heat until all the water is absorbed (about 5-7 minutes). Top with strawberries and peanut butter.

VEGGIE SUSHI ROLLS
2 cups cooked white rice
1/2 small avocado (50g)
1/4 English cucumber sliced
1/4 c shredded carrots
1 cup spring greens
2 sheets nori
1 tsp sesame seeds
2 tbsp coconut aminos for dipping (or soy sauce)

Lay out your nori sheets and spread the rice evenly over them. Take your avocado and divide it between the two sheets. Smash it into the middle of the roll. Add your cucumber, carrots and greens and roll tightly like a burrito. Cut into sushi pieces and sprinkle with sesame seeds. Dip into coconut aminos.

Potato Fries with Sweet Mustard

4 small-medium russet potatoes (650g)
1/2 tsp garlic powder
salt & pepper to taste
1 tbsp maple syrup
1 tbsp mustard
2 cup greens ( i use spinach)

Preheat oven to 420 degrees F (215C).
Scrub your potatoes well and chop into fry like pieces. Toss in garlic powder and add a little salt and pepper. Place on a baking sheet and bake 15 minutes. Flip the potatoes and bake again another 15-20 minutes or until soft when pierced with a fork. Mix together your maple syrup and mustard. Place potatoes over your bowl of greens and drizzle with dressing.

GRANOLA BERRY DESSERT
1/2 cup low fat granola
1 cup mixed berries (I used strawberry and blueberries)
1 cup unsweetened almond milk
1 tsp cinnamon
1 tbsp walnuts

Combine you granola and milk in a bowl. Top with fruit, cinnamon and walnuts.

If you want to keep your dessert simple, just have a few pieces of fresh fruit if you are hungry. Keeping your diet simple and easy is very helpful during your weight loss journey 🙂

Remember to get at least 30 minutes of light activity throughout the day such as a brisk walk or bike ride. It is important that we take small steps to care for ourselves and exercise should not be torture, it should be something you do because it makes you feel good and gives you time to reflect on your day 🙂

CAULIFLOWER BAGEL RECIPE
3 cups packed cauliflower rice (600g or 21 ounces)
pinch of kosher sea salt
1/4 tsp garlic powder
2 eggs, beaten
2 tbsp. almond flour
2 tbsp. coconut flour

EVERYTHING BAGEL SPICE COMBO
1 tbsp. poppy seed
1 tbsp. sesame seed
1 tbsp. minced garlic
1 tbsp. minced onion
3/4 tsp. kosher sea salt

Pre heat oven to 400

Line a rimed baking sheet with parchment paper and set aside.

In a large bowl, combine cauliflower rice, salt, garlic powder, eggs, almond flour and coconut flour. Mix until everything is well combined.

Take about 1/4 cup of the dough and start by forming a ball between the palms of your hands. Give the dough a gentle squeeze to extract any excess liquid and then flatten that ball out a bit keeping the edges rounded and then poke whole in the center. The dough is delicate, so work slowly and take your time. (See video for step by step instructions).

Place the bagel on the rimmed baking sheet and repeat until you have 8 bagels.

Sprinkle the everything bagel spice mixture over the top of each bagel, and gently push the seeds onto the bagel using the back of a spoon.

Pop into the oven for 30 minutes or until the bagels are set through and golden brown.

Allow to cool completely before slicing and adding your favorite bagel toppings.

Store in an airtight container in the fridge for up to 5 days.

We’re taking the chill off in the kitchen today with our Chili recipe. What’s great about chili is you can substitute any kind of meat whether is ground beef, wild game or even chunk meat. We’re giving you a great seasoning base and some ideas for your chili and from there you can customize to suit your tastes. Beans- no beans… hey I like a bean to give it an even heartier feel. So we hope you enjoy our chili recipe!

8- 10 servings

Cowboy Chili

2 pounds ground beef (wild game, chunk meat, etc.)
1 large yellow onion, chopped
2 (10 oz.) can Rotel (we used chunky), drained
1 Rotel can water
1 (15 oz) can tomato sauce
1 (16 oz) can kidney beans, drained (or your bean choice)
Green Chile Chipotle Relish (available https://kentrollins.com/shop-1 or 3 – 4 chipotle peppers in adobo sauce, chopped or to taste
1/3 cup chile powder
½ tsp cumin
2 tsp oregano powder
2 tsp paprika or smoked paprika
2 tsp salt
3 tsp minced garlic

1. In a large pot or 12” Dutch oven brown the hamburger over medium high heat. Season with salt and pepper or seasoning of your choice, to taste. As the meat begins to brown, stir in the onions. Continue cooking until the meat has fully browned and onions are tender. If there is a lot of excess grease, drain.

2. Stir in the Rotel, water, tomato sauce, beans, chipotle peppers or relish. Stir in the seasonings. Adjust taste, if needed.

3. Cover and cook over medium-high heat until it reaches a boil. Boil a couple minutes. Reduce heat and simmer for about 40 minutes, stirring occasionally.

4. Serve warm with cheese, onions, sour cream, etc.
