Chicken Adobo
3 lbs chicken breast
1 can tomato paste
2 cups water
1/3 cup apple cider vinegar
1 medium onion, quartered
4 garlic cloves
1 tsp sea salt
1 tsp oregano
1 tsp ground cumin
Put chicken, cubed in skillet or dutch oven and sauté. Mix all other ingredients in food processor until thick. Pour over chicken cubes and simmer for 45 minutes covered. Sauce should be thick and flavorful. Serve over shredded cabbage if you need a veg for the meal.
