P2 Italian Wedding Soup

Meatballs:
In a large bowl combine:
1.25 lbs. of ground turkey breast
½ cup of powdered grissini (or 8 sticks)
1 Tab. Italian Seasoning
1 tsp. Emeril’s Essence
1/4-1/2 tsp. crushed red pepper flakes
1 Tab. minced garlic cloves
1 Tab. Braggs Liquid Aminos
Bake in a 350 degree oven for 20 min. or until center of meatball reaches 165 degrees
Meanwhile…
In a large saucepan add:
1 Tab. coconut oil
1 Tab. minced garlic
½ cup of diced onion
Sauté over med-high heat for 3 min. or until translucent
Add 4 cups of spinach chopped (= to 1 cup chopped)
1 tsp. basil, oregano, thyme
Sauté for 1 min. to wilt
Add 6 cups of chicken broth and bring to a boil.
Place meatballs in soup and boil for a few min. to heat through
