P2 French Onion Soup with Beef – Serves 2
In a large saucepan add:
1 tab. coconut oil
1/2 tab. minced garlic
2 cups of thinly sliced onion (preferably sweet)
Cook over med-high heat, stirring until translucent — about 5 minutes
Add ½ tsp. salt and 1 tsp. of thyme and reduce the heat to low
Cover and cook for 45 minutes.
Check to make sure it doesn’t burn — stirring every 15 min.
Add ½ tsp. of powdered Stevia (or 1 packet) and
1 tsp. of freshly ground black pepper — stir
Add 1 quart of beef broth
Bring to a boil then reduce heat to med-low and simmer for 10 min.
Sprinkle ¼ – ½ tsp of Xanthan gum
— stirring well to break up any clumps floating on the top
Optional: add 2 — 100 gram servings of steak or ground beef just before serving
– heat and serve
