Fluffy Frozen Strawberry & Lemon Bars, P2 & P3 friendly, HCG Diet

Let me take you back to your childhood with these light, fluffy & delicious fruit bars!They remind me of the strawberry part of Neapolitan ice cream, my hubby says it reminds him of Strawberry Nestle Quick. P2 & P3 friendly & only about 14 calories & 2 carbs each.
Here is the recipe:
– Approx. 150g of slightly thawed frozen strawberries ( about 6-7 medium )
– 3/4 C. Sparkling lemon water
– 2 Tablespoons of Truvia ( 7 packs )
– 1 tsp. lemon juice ( approx. the juice of 1/4 lemon )
– 1 tsp. imitation vanilla ( adjust amount if real vanilla is used )
– 8 drops of LorAnne Strawberry candy flavoring
Blend above ingredients in blender ( I used a Ninja ) for approx 30 seconds or until well combined then add
– 2 Tablespoons of pasteurized dried egg white, I recommend a different brand than what I used, I suggest using ‘DEB EL Just Whites’ they note on the package that they are ‘salmonella negative- pasteurized for safety’.They are 5 calories per 1 tsp.
Once dehydrated egg whites are added blend again to add some air then pour into popsicle molds until frozen. You may need to run molds under warm water to get the frozen bar out.
Calories are approximately 50 for the strawberries & 30 for the dehydrated egg whites= 80 calories total for the entire batch & 13 carbs from the strawberries, divided by # of molds, I was able to make 7 to equal 11.5 calories each with approx 2 carbs a piece.
