2 Tab. Coconut Oil + Salt and Pepper
Roast in a pyrex dish for 10 minutes in a preheated 450 degree oven
Add:
1/2 cup each of chopped shallots, leeks, onion & 2 Tab. minced garlic
Stir to combine and roast an additional 10 minutes
Heat 1 quart of chicken broth and set aside
Place roasted vegetables in a food processor and blend for 1-2 min.
Add:
1/2 cup of finely ground macadamia nuts (optional)
1 tsp. salt & 1/2 tsp. white pepper
